Cheesecake Recipe

  • Cookie Crust

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon grated lemon rind
  • 1/2 teaspoon vanilla extract
  • 1 egg yolk
  • 1 stick (1/2 cup) butter

Thaw butter so it’s easily squishable if you were to squeeze it.  Smear butter on springform pan using some other butter, not the 1 stick.  Knead all ingredients together.  Smoosh and flatten into springform pan.

  • Filling

  • 6 packages cream cheese
  • 1 cup sugar
  • 1/2 cup Splenda
  • 2 tsp vanilla
  • 4 tbsp lemon juice
  • 4 tbsp flour
  • 3 eggs

Mix all ingredients but the lemon together.  Then mix in the lemon.  Pour into springform pan and back at 350 deg. for 45 minutes.  Turn off oven and let sit in hot oven for up to overnight.

I’ve used this recipe and it came out with a grainy consistency one in ten times.  The only thing I can figure is that two ingredients mixed poorly and should be separated in the mixing process.  If you have any ideas, please let me know.  It only happens once in a while.  I add the lemon separately for this same reason.
